Sebaraya Travel – Rendang is a dish of meat, usually beef, simmered slowly in coconut milk and spices until the sauce cooks down into a dark, dry coating. It comes from the Minangkabau people of West Sumatra.
If you have only had a wet “rendang curry” abroad, the original may surprise you. This guide explains how it is made, why it keeps so well, what the main versions are, and where travellers usually go to try it.
Where Rendang Comes From
Rendang is a Minangkabau dish from West Sumatra, and Indonesia’s official tourism site describes it as hundreds of years old. The name is linked to the Minang word merendang, which refers to the slow-cooking method.

It likely began as a way to preserve meat before refrigeration, because long cooking in coconut milk and spices helped the meat keep for weeks. That practical origin explains why a pot of rendang is often made in large batches.
How It Is Cooked
The base is freshly squeezed coconut milk with a spice paste of shallots, garlic and chilies. Lemongrass, galangal, turmeric leaves and kaffir lime leaves add the aroma.
Everything simmers over low heat, often for 4 to 6 hours. As the liquid evaporates, the sauce turns from something like a curry into a thick, caramelised coating on the meat.
That long reduction is the whole point. A rendang that is still swimming in sauce has simply been cooked for a shorter time.
Main Versions to Look For
Beef rendang, or rendang daging, is the best-known version. You will also see chicken, beef lung, egg and fish versions, the last mainly in coastal West Sumatra.
| Version | Main ingredient | Note |
|---|---|---|
| Rendang daging | Beef | The classic version |
| Rendang ayam | Chicken | Lighter than beef |
| Rendang paru | Beef lung | A Minangkabau speciality |
| Rendang telur | Egg | Egg-based version |
| Rendang ikan | Fish | Found along the coast |
| Rendang hijau | Beef with green chilies | Milder heat |
Similar dishes are also popular in Malaysia and Singapore, so the name on a menu there may describe a different style.
Rendang at Celebrations
Rendang is served at weddings, community gatherings, and both Eid celebrations. Cooking it is often a shared family task, which is part of its meaning.
Indonesia’s tourism ministry says each main ingredient carries a symbol, from coconut milk for wisdom to chilies for patience. You will not need to know this to enjoy it, but it explains why rendang is treated as more than everyday food.
Global Recognition and UNESCO
A CNN list named rendang the world’s most delicious food in 2011 and again in 2017, according to Indonesia’s official tourism site. That ranking is a media list, not a formal heritage status.
The Ministry of Culture has called rendang worthy of a UNESCO intangible heritage nomination, but in November 2024 the documents were still being prepared. Treat any claim that rendang is already UNESCO-listed with caution unless it comes from UNESCO itself.
Where Travellers Try It
Padang and Bukittinggi in West Sumatra are the places most often recommended for rendang, including market stalls in Bukittinggi. Outside Sumatra, “Padang restaurants” across Indonesia serve it alongside many other Minangkabau dishes.
For example, at a Padang restaurant you may get many small plates placed on the table at once. Ask how billing works before you start eating.
Next time you see rendang on a menu, look at the sauce: the drier and darker it is, the longer it has cooked.
